Cocktail Friday: Basil Strawberry Balsamic Mojito

This Cocktail Friday, we’re mixing up something special! My Basil Strawberry Balsamic Mojito is a refreshing twist on the classic, featuring sweet strawberries freshly picked from the farm, basil, mint and a hint of balsamic vinegar (the good stuff from Italy, of course!). Perfect for summer evenings!



Ingredients

4-5 fresh strawberries, hulled and sliced
4-5 fresh basil leaves
6-7 fresh mint leaves
1 oz fresh lime juice
2 tsp strawberry simple syrup (recipe below)
2 oz white rum
1 tsp balsamic vinegar
Club soda
Ice cubes
A strawberry, mint and basil sprig for a garnish

Directions
Muddle the strawberries, basil and mint in your glass. Add ice, top with white rum, strawberry simple syrup, lime juice and balsamic vinegar. Stir slightly to combine and top with club soda. Garnish with a fresh strawberry, basil and mint sprig.

Strawberry Simple Syrup

1 cup of sliced strawerries
1 cup water
1 cup sugar

In a saucepan, combine the strawberries, water, and sugar.
Bring to a boil over medium heat, then reduce to a simmer. Cook for 15-20 minutes, stirring occasionally, until the strawberries are soft and the syrup has thickened.
Strain the mixture and let the syrup cool completely and store it in an airtight container in the refrigerator for up to two weeks.
