Gin Rhubarb Sour

makes one cocktail

Ingredients:

2 oz gin

1 oz rhubarb syrup (recipe below)

3/4 oz fresh lemon juice

1 egg white (optional, for a frothy top)

Ice

Rhubarb ribbon for garnish

Directions:

In a shaker, combine the gin, rhubarb syrup, lemon juice, simple syrup, and egg white (if using). Dry shake (without ice) vigorously to emulsify the egg white.

Add ice to the shaker and shake again until well-chilled. Strain into a coupe glass.

Garnish with a rhubarb ribbon.

Rhubarb Simple Syrup

Ingredients:

2-3 rhubarb stalks

1 cup water

1 cup sugar

Directions:

In a saucepan, combine the rhubarb, water, and sugar. Bring to a boil over medium heat, then reduce to a simmer.

Cook for 15-20 minutes, stirring occasionally, until the rhubarb is soft and the syrup has thickened. Strain the mixture and let the syrup cool completely.

Store it in an airtight container in the refrigerator for up to two weeks.

There’s nothing quite like a Gin Rhubarb Sour to celebrate the start of the weekend. The combination of gin’s botanical notes with the tart sweetness of rhubarb makes for a truly unique and delicious drink!

Cheers, Friends!
